The rich taste of a Chimay ale still captures my heart. I remember the first time I sampled this Belgian ale. From the first sip, I fell deeply in love with the special blend of Belgian hops and yeasts that produce this delicious ale. If your idea of beer is the mass produced bottles and cans that line most grocery and liquor store shelves, I assure you, you have not had a beer.
I am struck with the ease that this beer pairs with food. Rich foods like a hearty steak and spicy foods like pizza love this beer. But my requiebros is the wondrous pairing of good Belgian dark chocolate and Chimay. For the tasting, I imbibed the Chimay blue label. I have never liked the pairing of port wines and chocolate; the combined sweetness was always overwhelming for my taste. After allowing the creaminess of the chocolate to coat my mouth, the Chimay refreshed my palate unlike any other beverage. Every Chimay is slightly different, owing to the complex brewing interactions of yeasts and hops. If the Chimay has chocolate and coffee overtones, the interaction is exhilitrating!
