Poke
This is a Hawaiian dish which combines the best elements of the island's foods. Pronounced po-keh, poke is a Hawaiian word meaning to slice or cut. The traditional dish is made with bite size chunks of raw fish mixed with sea weed and kukui nut. Many cultures, blended in the island's melting pot, have concoted their own variations of this dish and ingredients as diverse as soy sauce, sesame oil, onions, chili pepper, crab, lobster, tofu, and chicken have been utilized.
I love the many varieties of poke and am constantly astounded at the creativity and imagination of island poke afficianados. As one may imagine, there are some restaurants which skimp on the ingredients yielding a bland and unexciting dish.
My requiebros will always be the delight in having a freshly prepared dish in the islands, biting into it, and discovering luscious chunks of kukui nut, a rarity in any other place other than the islands.
